Wondering if the lettuce saps are harmful or allergic to human body? Or is it safe to use naked hands in lettuce seed collection?
Milky sap is perfectly normal and will not pose any threat to you. Some sensitive people, however, may experience mild contact dermatitis upon handling lettuce. If you are one of these rare individuals, I would suggest using gloves whenever you must handle the plant.
I have many plants - lettuce, squash, pakchoy, chard, etc. - in my cold frame greenhouse being chewed off right at the root line. All of a sudden the plant wilts and when you touch it, you find it has been cut off from its roots and is dying. I checked your site and it looks like it could be root maggots perhaps. However, it is a clean cut and no identifiable bugs. Sometimes it seems like there may be many tiny tiny bugs at the root line. Can you help?
This damage is caused by cutworm. This article will help: https://www.gardeningknowhow.com/plant-problems/pests/insects/get-rid-cutworms.htm
I have an above ground garden in which I planted Romaine lettuce. It has grown very tall, with flowers. The same thing has happened to my cilantro. In doing some research, I understand this is bolting. Can I cut these down to a few inches and let them regrow? Should I let them continue to bolt? (I live in AZ)

I would like to ask how do you collect lettuce seeds and where do you find them?
If you allow the plant to flower, it will produce seedheads from the spent blooms, from which you can harvest the seeds and save for next season. Here is more information on growing lettuce: https://www.gardeningknowhow.com/edible/vegetables/lettuce/growing-lettuce.htm
I would like to ask how do you collect lettuce seeds and where do you find them? Also, if I cut the leaves off the lettuce and leave the root in the ground, will it seed?
If you allow the plant to flower, it will produce seedheads from the spent blooms, from which you can harvest the seeds and save for next season. Here is more information on growing lettuce: https://www.gardeningknowhow.com/edible/vegetables/lettuce/growing-lettuce.htm It normally depends on the type you have, but many of your leaf lettuce varieties will regrow. It will only produce seed if allowed to flower, however.
I would like to grow lettuce and cucumbers in a self-watering container that I am making in an 18 gallon tub. Can I do this because I understand the roots are shallow in lettuce?
This article brings up several aspects of growing lettuce in containers: https://www.gardeningknowhow.com/edible/vegetables/lettuce/growing-lettuce-containers.htm

I've never tried growing the two together, but I think if you stake up the cucumber, it should work.
