Once the blooms die, I notice the stem turns brown. Do I trim it off? Also, there are a lot of shoots coming from the bottom of the plant. Are these off shoots wanting to root? If yes, then what do I do?

My orchid was doing great but then within 1 week, all of the flowers fell off. I am at a loss! Do I need to fertilize my orchid? I give it 3 to 4 icecubes once a week. Is that enough? When the Orchid is done flowering, the flowers will drop off. This is the natural aging process of the Orchid.
It then goes into a dormancy period.
