My mom gave me a start off her hens and chicks. I thought I'd given them to much water or sun, trying not to kill them, the tips are turning towards the dirt and are pale.
This looks like it needs more light. These are full sun plants and need as much as possible. It is also showing signs of being overwatered. They are very drought tolerant, and will want to be quite dry between watering.

last year my hens and chicks grew very well, this spring when snow melted very few were left and they have not grown very well. how do I protect them during winter?
They should be completely hardy in your area. It could just be that the soil is too rich, or that there was too much moisture over winter. This will kill them for sure.
These guys are succulents, and hardly ever need water. You may have to, drastically, change the ground where they are to match the needs of this plant in order for them to survive. They thrive on poor soil that is gritty and does not retain moisture. Rocky, or sandy areas are best.

anything i need to do for them in winter or just leave them out on deck thank you for youe help
Most cultivars of this are pretty hardy, but there are a few that are not. If you have either one, it won't hurt it to bring it inside for the winter and place it in a sunny window. If it is the hardy one, this will only give it a head start before it gets placed back outside.

I'm in zone 7. {'m also wondering how well they will do in the ground, for winter?
Many varieties will be well suited for this zone. If you got your variety from a place within this zone, then it is very likely that it will be hardy. If this is the first year that you have had this, then it may be wise to winter it in your greenhouse this year, then plant it out next year.

Squirrels take or eat my hens and chicks. They disappear.
Yep! Just about everything will eat them, so you may have more animals visiting your buffet than you realize!
One good suggestion would be to use bloodmeal, which will attract predators, and keep away prey animals. Hot peppers made into a spray works pretty well, too.
