My grapes are producing fruit now and I want to gain a better crop. Maybe the soil ph is an issue?
The best way to keep them fruiting well is with proper care and with proper pruning. Here are two articles that will help you on these subjects:

I'm not sure if I want the ediable or wine making type, but I do love them. I would like to grow a vine which eventually grown up and across the ceiling of my balcony. At present, the container has homemade compose in it that has turn to soil and has been standing on my balcony for a few years. If I have to get rid of it or mix it with something new, I will....My Balcony is facing a north westerly position. Can you help me with this and the price of such a vine if I choose to purchase one.
There are quite a few choices, here, as they make great container plants! You can choose a cultivar that sounds good to you, from research.

As far as pricing- That will depend on where you purchase. You will likely get a better price from purchasing locally, but there are many vendors online. You can check places like Amazon, Etsy, or Ebay.
They are older and did not prune this winter

We moved to Salisbury last September, to a house with nine vines growing over a pergola above our patio. They are all well established (around 8 years old) and, we understand, once produced enough grapes for some wine to be made, but not last year, when they were pretty small and not many to be picked. Some are white, others black. We don't know the varieties. How do we look after our vines please? Should we prune them? If so when and how? Should we train them along the pergola? When and how should we feed them?
Typically, the exact care they receive will depend on the exact cultivar that the grapes are. Without knowing this your experience will be trial and error, mostly.

Placed in treliss last year.
If the seeds were few, then this is completely normal. If there were many seeds, then it could be that the plant was mis-labeled.

How can I keep thorns from growing in among the grape vines. I prune & cut back the vines and then cut/pull the thorns out, but they just keep coming back.
Unfortunately, weed killers that will kill off the thorn vines will likely kill the grapes too. You will have to cut them before they send out flowers or seeds, and also dig up the roots completely every time you see the first hint of a plant coming up. Try mulching well to prevent new ones from growing.
I have a grape vine only 3 years old. It is loaded with grapes this Summer. I have been told I should take them off. Why? Will leaving them on set the vine back? A shame I feel to destroy the grapes but maybe I should. Thanks
No, no! Don't do that! This is the year that you have been waiting for. 3rd year grapes are ideal. After this, you will be pruning some of the older cane back for rejuvenation.
