I have dug up my garlic and I need to know where and how do I dry and store it.
Simply store any freshly dug (unwashed) bulbs in a dark, dry place as soon as possible to dry out until ready to use.
Where can I buy garlic cloves for next year planting?
There are many online sellers you can buy from or you should be able to buy it from a local plant nursery. If you like heirloom varieties, this is an excellent company to buy from:

What is the best way to process a garlic stem?
I, for one, do not understand your question. Are you talking about garlic chives or actual garlic stems? What kind of processing do you want to do?

How do you grow and harvest elephant garlic?
While it is closer to a leek than a garlic, you plant and grow elephant garlic like regular garlic. Because of its size, spacing is different. Put the cloves 8-10 inches apart in rows 18-20 inches from each other. Set them 1-2 inches deep. Sometimes elephant garlic tends to produce only one large, solid bulb with no segments. If this occurs, replant and it will produce a bulb the next harvest with the more typical cloves. Planting usually takes place in fall, about 4-6 weeks before the first hard freeze in order to establish roots but it can also be spring planted. Harvest the garlic by pulling or digging when the tops turn brown and die down in summer. Store in a cool, dry place to prevent sprouting.
I am going on holiday in 2 days time but I have only just harvested it. I have a glass fronted garden shed that gets very warm. Should I hang it in there? I haven't got time to dry it then store it as I normally do. What shall I do? The shed has got a window. I also have a brick utility room - no sun, fairly cool.
I would suggest you lay it out flat on layers of newspaper to allow it to dry in your utility room. A cool and dry area works best for hardening off your garlic. You can bundle and hang it when you get back.
