it was a house plant with small leaves but growing up the tree about 6 feet they are very large like plate size
It may cause an issue if the pruning isn't kept up. If it gets out of control, the root system could, potentially, choke out your tree as well.
With proper care, this can work, but I would not recommend it , personally.

Plant looks healthy but more like a bush now. Will the bottom leaves fall off". Right now it looks more like a bush than A tree. It has grown about a foot in two month but still doesn't;t look like a tree. What else should I do?
Since the tree is still young, you may need to prune it annually to encourage more of a "tree" shape and less of a "bush" shape. Dogwoods should be trimmed right as blooms fade. what you think of buying a tree that has already been transplanted? I went to a tree farm to look at Dogwoods. Some have been transplanted and others haven't. The owner suggested I get one that has already been transplanted because it's already been through a transplant. But the ones that haven't been transplanted have more leaves and more leaves that are green. He also said this is because those were watered and sprayed more. The one that has been transplanted is also a year or two older so he said it's "further along."

Our dogwood was planted in early November. i'm watering it at the roots daily, but i am not sure when i should stop. i am guessing i should stop when the temps drop below freezing, but we're having an unusually warm autumn here in NW Missouri...
Trees should be watered regularly for the first year, but once a day may be too much. Water deeply about twice a week till cold weather sets in, then only water during dry spells in the winter. In the summer and fall, dogwoods usually need supplemental watering.

Will cutting to far back still provide new growth?
Here are instructions for pruning a dogwood that should help you determine if it was cut too far back. You should get new growth no matter how it was cut, but if it was "topped" you will get undesirable thin growth that goes straight up and is called water sprouts. You will need to remove those if you see them next spring.
