I have two peace Lilly house plants that are producing new leaves that have no tip or the tip turns black. They both were repotted last summer and are now in a closed office space/ bedroom
Are your plants getting much light? Even though peace lilies are touted as low light plants, they do much better with ample light, and they won't bloom without enough light.
Also check whether they are overwatered or underwatered. Hard water deposits also can wreak havoc. Those can be flushed out with lots of water. Try watering with bottled water or distilled water instead of tap.

I also trim some of the roots and added some new soil.
Trimming the roots caused this issue. Likely, the portions of the root (the tip) that take nutrients and water up have all been destroyed. Some plants can recover quickly, but this one will not tolerate root pruning in this fashion.
From here, it will be a race. If the plant can regrow some roots before it dies, completely, then there is a chance that you may save it.
In the future you will want to repot very carefully. Try not to disturb the roots unless you want to divide them up. Even then, be sure to keep them intact while dividing.

My 25+ year old peace lily suddenly 'wilted' and despite watering and some TLC, lost all it's leaves and is just a green stalk now. We suspect that our cat used it as it's litter box a few times. I removed what was left of the plant from it's pot and put the stalks (3) in individual pots with fresh dirt. The stalks are still green. Is there any way to save these?
It may have been pot bound so what you did was the right thing and should help. Keep them watered and provide bright but indirect light.

I have a peace lily that I have had for several years and its still not very big like I see others have, what am I doing wrong?
It will all come down to proper care. Correct watering habits, proper lighting, and occasional feeding will keep this plant alive and happy. They can be quite particular. These articles will help:

Also, how to prevent yellow/brown tips
It all comes down to proper care! They can be a bit particular, so, many things can cause browning leaf tips.
In order to keep it at its best, there are some things to know. This collection of articles will help:
Hello I purchased my peace lily from lowes and it was flourishing there but since I got it home the blooms have turned brown/black and the babies have died. I think I need to repot not sure. I did cut the flowers, the white parts that had black in them where they were black hope that was right but I fear I’m killing it. Please help. Images show rot already cut out. There is also something white on the leaves.
It, definitely, needs to be repotted! I think that doing so and treating with a fungicide will take care of the issue. Just be sure to give it the best care, possible, and take care not to overwater:
I have a Peace Lilly in a fairly large-sized pot, transplanted from the original received at the time of purchase. I'm afraid that I may have overwatered it because it has appeared wilted for quite some time. As a result, I haven't watered it for almost 3 weeks. Could my air conditioner be affecting anything? At times when I do feel the soil texture, it isn't really that dry. I did top up the soil from a friend's garden all to minimal avail. Any tips would help.
It's best not to use garden soil on your houseplants. There are too many organisms in garden soil.
I would repot the plant since you think it's been overwatered. There could be root rot setting in. Wash out the container real well and use fresh potting mix. Check the roots and cut off any brown or black roots or anything mushy. Also the container shouldn't be more than one to two inches wider than the previous pot. Moving to a too-large pot can cause the plant to be overwatered. Here is how to repot:
