Deer ate most of my star hosta. If I prune early July, will leave regrow this summer?
They may, but if there is foliage left, there is no reason to prune. Only prune if the leaves are completely dead and brown. They will have much more energy to come back properly if left alone.

' m assuming something has eaten the leaves. What should be used to discourge this?
This would depend on what is eating them. Since there isn't a good idea of suspects, it may be necessary to fence them in, or use chicken wire.

My Hostas are all on the East side of my house. I have 2 Hosta Greens, 2 Plantain Lily hostas, and 2 Variegated Hostas. Since the weather has been really hot, we have been watering them almost every day. The solid green ones have been turning leaves yellow which makes me think I've watered them too much, but the Lily and Variegated hostas have not turned yellow. What should I do to bring the hostas back to health that are turning yellow?
I think too you are watering too much even though they aren't all turning yellow. Another reason they turn yellow is leaf scorching. Do the yellow leaves have brown edges? If so, they need to be moved to a shadier location or water more, in the morning, to keep them cooler.

I have 20 hostas beside the shady side of my house. The deer have big bites out of all of them - they are young plants. I don't know how to send photos. Sorry.
If you plant ferns, astilbe and columbine in and around your hosta, it may deter the deer (or they may still pick out the hosta!). Here is more:

Hostas were full and beautiful and still are sending up flower shoots that bloom. What can I do to preserve them? Leaves are yellow, brown, milky white. Some still look healthy.
If you have them in sun it could be leaf scorch. Be sure to remove the bad leaves right away. This article will explain the problem and possible solutions: https://www.gardeningknowhow.com/ornamental/foliage/hosta/hosta-leaves-turning-yellow-2.htm
