I have plenty of flowers but only one zucchini so far. I know that is really strange. What is wrong? I am getting plenty of cucumbers and peppers.
Zucchini can have a few growing issues. The lack of production could be a pollination issue.
Here is a few links with more information to help you pinpoint the cause.

What caused my zucchini vine to die in the middle and then finally die altogether?
The zucchini, if they died after a few weeks, may have had vine borers. This article can help you with that: https://www.gardeningknowhow.com/edible/vegetables/zucchini/vine-borers-zucchini.htm
My zucchini is not like a bush but the main stem is long with only a few leaves and buds at the end of the long main stem.
There are many varieties of Zucchini and this may be the growing pattern of this particular plant.
Also soil and environmental conditions can effect how a plant grows.

What causes a bulge to appear on zucchini fruit after it has been picked? This has happened for 2 years now. After being picked, some get a bulge that goes all the way around the fruit.
I have not found any research that shows this particular issue you describe.
If the the zucchini has no other issues, i.e. insects or signs of disease, I would not worry. Environmental issues can certainly cause various issues with fruit and vegetable shape.
If the zucchini is mushy, I would not consume and it may be caused by insects or fungus issues.
Practicing crop rotation is important and would recommend this for next year.

I live in Hainesville, Illinois. (Zone - ???) Some of my zucchinis are turning orange. Some of it is green and the orange color is spreading. Is this normal? I have picked zucchinis already, but they were green in color.
Depending on the size, it could be a pollination issue or the squash has simply reached their fully mature color. I imagine that the flavor will not be what you are use to from this squash now that they have changed color, but it will not hurt you to eat them if you want. Otherwise, you can just toss them.
We have a large, full, zucchini plant that has blossoms. It started a zucchini then at about 3" shriveled and rotted on the vine. Container gardening, organically treated for white fly and aphids, etc. Why are they not developing into a full zucchini?
It sounds like you have vine borers. This article will help:https://www.gardeningknowhow.com/edible/vegetables/squash/squash-pests-identifying-and-preventing-squash-vine-borer.htm
I have a pile where I dump old containers and this year a robust vine sprung up. It looked like a squash type of leaf and yellow flower. So I waited and zucchini like fruit developed, but every one has a wide yellow/orange band around the vine end. I thought maybe gourds, but they keep getting bigger like zucchini do. Do I have a cross of some sort? Are they edible?
The seeds likely were from a hybrid plant so they will not resemble the parent plant.
It may be some version of a squash type plant.
