will sunflower seeds continue to ripen and get a black stripe if i cut the head off the stem a little too early?
I have answered in the original, but just in case it didn't go through- It really depends on the maturity. If they were really close, it won't hurt anything. If they hadn't changed colors yet... Probably, they won't much after harvesting.

How tall should my red sunflower grow ? I read online that they only grow to an average 1.2 MTRS but mine is way over 2 MTRS as you can see in the pic.
This happens when they are shaded for a portion of the day. They will stretch in response to lower light, seeking brighter areas.
Generally, max height describes the height of a plant in perfect conditions, but does not account for shade, crowding, soils lacking in nutrients, or other factors that can affect height.
Generally, any drastic variation in height means that their environment is a little less than ideal, but does not mean that they are suffering. They, simply, adapt to their surroundings as best as they can.

Do I need to uproot sunflower plants and store somewhere for the winter? I live at 6000 feet and it snows....Thanks for your help!
Most sunflowers are annuals, and will not survive after dropping seeds. Digging them up before flowering is complete sill stop the process killing the plant prematurely. The best thing that you can do is leave it to complete its cycle. Like from the base of where the stem connects ?
Genetic abnormalities, less than ideal environmental conditions, and disease can all cause this.
In most cases, it is not an issue. It is quite common, however.
If you are noticing other symptoms, as well, then you may want to test your soil for deficiencies. If tests reveal that nutrients and pH are within range, then you can treat for disease.

the sunflower in the middle just yesterday was fine but then yeeted itself into oblivion while I was out today/ past two days have been cloudy and today was sunnier (they r not exposed to harsh wind/ sudden temperature drops) also her leaves dont feel dry like when it lacks water what's wrong?
This appears to be Verticillium wilt, or any of the other closely related fungi that cause sudden plant death.
It will spread through the whole container, eventually, and needs to be corrected with solarization of your soil. You can let the sun do this by covering with clear plastic, or you can do it yourself by baking the soil at, exactly, 160 degrees Fahrenheit for 2 or 3 hours.

Last year I planted a sunflower that grew large leaves and head but not tall. I used some chicken manure tea and wonder if that was the reason. Could over fertilization restrict height and cause plant to grow wide with big leaves and big head? We have a neighborhood sunflower contest each year and my sunflowers are the biggest but not the tallest. Same seed to all participants, I also used compost chicken manure.
Work plenty of compost into the soil before planting sunflowers. Here is more about growing and fertilizing your sunflowers.
