When an orchid grows bi-shoots which blossom, should the old plants be cut or trimmed away? In this case the new shoots are blooming and we don't know what to do with the old shoots? Or would that kill the plant? Your help appreciated.
If you have old stems that the flowers have faded; those can be removed.

No, they will flower from the stalk again. Only cut any parts that die off.
They have a specific care regimen to get them to flower again. Most orchids flower when the total time in PITCH BLACK DARK exceeds 12 hours per day.
They do need a period of longer daylight duration in between to rest and produce foliage, though.

My Orchids roots that stick up out of the dirt are shriveling and dying. The leaves are drooping Browning and are tearing.
If they are in standard potting soil, or dirt, then this will be the issue. They are epiphytic and will live primarily on the bark of other trees. Soil will be too heavy, and remain wet. Orchids can not tolerate these conditions. Soil should only be used if it is directly specifically blended for orchids.
Too much light can also be problematic, as can too cool temperatures. There are many factors that can cause an orchid to suffer.

It is in a very small pot and it is growing rapidly. It has 4 new leaves and lots of new shoots at the base. It is not currently blooming.
The best time to repot if needed (orchids like cramped quarters) is soon after flowering. Here's how:
