Q.When indoor orchids drop their blooms at the end of flowering, should I cut the stalk so another will form?

No, they will flower from the stalk again. Only cut any parts that die off.

They have a specific care regimen to get them to flower again. Most orchids flower when the total time in PITCH BLACK DARK exceeds 12 hours per day.

They do need a period of longer daylight duration in between to rest and produce foliage, though.
