I have two pots of Black Beauty eggplant and one of the plants is sending out half a dozen flowers right now. One of the flowers has already bloomed, the second day today, and a few others should be in full bloom any day now. I hand pollinated the flower using a cotton swab yesterday, and noticed that there is no visible pollen on the swab. I did it again today and did not see any pollen on the swab too. When I hand pollinated my bitter gourd plants, there are lots of yellow pollen. Maybe the weather here is very hot, humid and we are having rainy days lately. I've read that these conditions might affect to the stickiness of the pollen and it would affect the pollination process. My question is, what colour should the pollen be (yellow?) and if the pollen is sticky, would hand-pollination helps at all? Thank you!

Eggplant pollen is typically yellow. Hot and humid conditions aren't conducive to eggplant pollination and if the pollen is sticky, then hand-pollination would be difficult.
What is the cause and solution of white colour on the leaves?
If you see a white, powder-like substance on the leaves, this is powdery mildew. Please see these articles for help:

If instead the leaves are turning pale green/yellow and then almost white, this could be sunburn or a nutrient deficiency. See this article:

Why is the fruit yellow and not purple?
Eggplants do come in many colors other then the traditional common purple color.
They can be from white, cream, green to even near black.
There can also be issues with over ripeness, nutrition or insects that may cause yellowing of the Eggplants.

I been hand pollinating my Eggplant plants for two weeks now. About 1 month now they started to bloom lot of flowers after two weeks of not seeing any fruits i started to hand pollinate them. I have been doing this for two weeks and my flowers are slowly but dying or falling. Any comments or ideas why? The plants are big and healthy and been watering fine and been giving them compost tea. thanks!!!
Your application of compost tea may be too often and too high in nitrogen.
Eggplants are heavy feeders, but need the phosphorous for fruit production.
One cup of phosphorous rich fertilizer at the planting of starter plants, followed by 1/4 cup phosphorous rich fertilizer in a 2 foot circle around the plant, just after blooming. This should be the only fertilizer needed.

love the detailed articles on growing eggplants in containers. since they are related to tomatos, do you have to pinch the "crotch" or new growth off?
Trim off any suckers that originate in the joint between the main stem and lateral branches of the eggplant. Cut or pull them off as they occur at the point of origin on the main stem.

The eggplants are are about 2 months old, the plant was until a week ago where large white spots started spreading. It seems like there are bugs, there are small brown/black dots or insects inderneath the white layer
Looks to be a Leaf Miner.
Treat the plants with Neem Oil.
