I have two very nice big plants out back and I got eggplants off them this year. Is there a way I can keep these plants and see if they grow again next season? They are very big and healthy and would be nice to see if they came back next year. Thank you.
These warm-season crops will not tolerate any cold. After they have put out fruit andit is harvested, the plants will naturally die out to be replanted in the following growing season.

My first try at growing eggplants, but an experienced gardener. Eggplants started under lights, planted in warm soil. Healthy plants, good fruit set, young fruit purple but when about three to four inches long, fruit turns yellowish green. When roasted in skin, too bitter to eat. What caused this? Can any fruit be saved or should I just pull up plants? What advice have you if I want to grow more in future.
Eggplant that is harvested to late is quite bitter.
Verify the type of Eggplant you are growing, as some are quite small and should be harvested at small sizes.

This year we have a bumper crop of eggplants, but after the first few, all the eggplants have got their bottoms with a rough grey skin. It has not affected the flesh and I just peel it off, as it is quite tough. Could you tell me what it might be and if it can be prevented? I eagerly wait your advice. Thank you Chris
This could be a fungus or even blossom end rot.
Lack of air flow or wet conditions can be some of the causes.
Make sure you water at the soil line and avoid water hitting the plants.

This is likely Rust fungus.
Neem Oil can be used to treat the fungus.
Make sure you are watering at the soil level, not splashing water on the plants themselves.
Good air circulation is helpful in control of the Rust fungus.

My eggplant is flowering but it is not fruiting. I live in Kpk, Pakistan.
This is likely due to either lack of pollination or not enough water, or a combination of both.

Once the season is over for eggplants, do I pull them out of the garden and replace or do I cut them back so they produce next season?
If you are in a Tropical zone you can cut them back to one main stem. Doing so will help produce a better fruit for next season. However, if you have colder winters then you will need to replace.
