I picked rhubarb until the first of July and then left it alone. it has come back more than the spring and wondering if i can cut it down again for another harvest, or is it late (august 15)? I would hate to see the beautiful red stems go to waste.
While it is possible to harvest the stems in August, harvesting too many will weaken the plant and lead to a smaller harvest next year. The stems won't go to waste in either case because the plant will store the energy for its use during the winter and next spring. See the following Q&A article for more:

My newly planted small rhubarb plants have some leaves that are turning yellow. I want very much to have these plants survive and don't know if the yellowing is an indication of improper soil or minerals. S.R. Beardsley
The yellowing leaves in a new planting are likely watering issues. Too much or too little.
Soil should be moist but never dry or soggy. Make sure the soil is well draining.
Avoid watering down into the crown of the Rhubarb.

Should the rhubarb stalk be red to harvest it?
Not necessarily.
Rhubarb varieties vary, some red, some pink and some green!

I planted new rhubarb plants this past spring. Two of them have seemed to die back. One is leafy and ok. Are the first two going dormant or are they dead??
The leaves will generally die back naturally as you enter autumn or at a first frost.
Is the soil dry or excessively wet? You will want to provide water until dormancy with newly planted Rhubarb. Avoid watering down into the crown.

The plant grew very well. It has red at the bottom of the stems but the rest of the stem is green. The stems are about 15 inches long. Do we harvest any of the stalks this first year or do we let it die out , mulch for the winter and start again next year. My instinct tells me to cut it back for the winter but I have heard you can't do this as it would inhibit a good growth for next year. What do we do with it at this time to get it ready for our northern Ohio winter?
