My rhubarb seldom gets much pink/red to it. I use it anyway in strawberry rhubarb pie. How do I get it redder?

I was wondering why Our Rhubarb is coming out sponge and has stocks that are hollow and at the top they have a lot of seeds on them. I don't have any photo cause I just found out about tis site.

What should I fertilize my rhubarb with.?
The year after planting, it's a good idea to fertilize your rhubarb plants in early spring, before the plant begins to sprout significantly. Use an all purpose fertilizer - a 10-10-10 formula works well. Compost or well rotted manure also works well as a fertilizer. If you use a granular type fertilizer, apply it according to the manufacturer's instructions. It is usually applied at a rate of 1 1/2 pounds per 100 square feet. Sprinkle the granules around the plant, being careful not to let the granules come in contact with the plant itself. This may burn the plant or have other adverse consequences. After applying the granular fertilizer, water it in well

Can you still eat the stalks that have the black spots with a jellified eggy stuff coming out or do you need to discard the whole stock or can you cut around it and still salvage some of the stock and can you eat that
I would say this is either an infestation, disease or it could be from aging.
I would discard these and not consume.
The last two years, my rhubarb has been pencil thin. To thin to harvest. Does it need something added to the soil? It has never been that way before and I have been growing it for many years in the same spot. Do I need to move it to another area? Thank you
Do you know the variety that you are growing? Some varieties stalks are thin.
