The purple probably is not natural to the orchid. The purple orchids are most likely injected with a purple color product. I think this is why you were told it would be white when it comes back to life.
However, when I went to the official "Just Add Ice" orchid website, they are suggesting that the colors are most brilliant on a Just Add Ice Orchid due to the lighting conditions in the greenhouse and that they will fade in the lower light conditions in your home. They suggest keeping your orchid in a location which has plenty of bright in-direct sunlight.

How long does it take to grow a new orchid stem for the buds to appear after repotting? I repotted my orchid plant and it is growing a new leaf but it hasn't shown any signs of a stem growing out for new buds. The old stem died awhile ago.

You continue to care for your orchid even when it's resting.
Trim away the spent flower stem. Remember to always use clean sterile tools when working with orchids.
Maintain the proper light, water once a week, fertilize with a balanced fertilizer at half strength every couple of weeks.
Your orchid does like cooler evening temperatures around 65 to 75 degrees.
