Olive Trees have a shallow root system, they are not know as an invasive tree, though you should never plant a tree within 10 feet of the home foundation.
The Olive Tree roots are known to surface and can be damaged easily by mechanical equipment.

Try carefully running a knife around the edge of the root ball between the soil and the pot. Then, carefully lay the plant and pot on its side, on the lawn, driveway or over a tarp. Wiggle the planter around until you can pull it away from the root ball. You may need a friend to gently pull on the trunk (or the roots if they can reach any) while you do this. In some cases you may have to damage the roots a bit to get the plant free.

The leaves of the Olive Tree live about 2 years.
The Olive fruit starts out green when immature and then turns yellow/green in fall and eventually turns black at full maturity.
It takes 6 to 8 months for Olives to reach this maturity.
You very well could be describing a healthy tree.

How many gallons of water per week should I water my 12 foot olive trees planted 2 years ago? The leaves turn yellow and drop. Also, when they were planted, the planters were teeming with tiny ants.
