    For ease of cooking, we would recommend that you chop them. The normal way to freeze vegetables from the garden is to blanch them, spread them out on a cookie sheet and then freeze them. Once they are frozen, you can put them in storage bags and keep them in the freezer until you use them. While most vegetables can be frozen, cucumbers are usually not good candidates for this process. However, your okra, peppers, and squash will freeze just fine.     They sound like they need more water. Increase water to the plants and they should be fine.
