Q.Freezing Veggies

Anonymous added on June 8, 2011 | Answered

I have picked some okra, little orange hot peppers, basil, squash and cucumber. I can’t use them right now and was wondering if it is ok if I freeze them in my freezer?

For ease of cooking, we would recommend that you chop them. The normal way to freeze vegetables from the garden is to blanch them, spread them out on a cookie sheet and then freeze them. Once they are frozen, you can put them in storage bags and keep them in the freezer until you use them. While most vegetables can be frozen, cucumbers are usually not good candidates for this process. However, your okra, peppers, and squash will freeze just fine.
