Hi - I'm going to be receiving a Dahoon Holly similar to the two large trees in the picture. Seems substantial and full in relation to the houses. Would you have an opinion whether an Eagleston Holly would be less substantial and full looking for these type of properties, or about the same?
The Eagleston holly is a hybrid of the Dahoon. It can grow up to 25 feet and has a pyramid shape. The Eagleston may be less prone to problems and may be a hardier variety. As far as size goes, it seems that they are generally similar in height and breadth.

the birds usually eat them but haven't this year
You don't need to, but pruning will tidy them up.

I've a holly tree in my garden. It's as tall as the house (1930 semi) and~foot in diameter. Each year fewer and fewer leaves seem to stay through the winter and the odd ones that try don't look very happy! Holly is slow growing I think so I'm guessing it is a old tree.
Hollies are generally hardy so check yours for insects and disease. Environmental problems also can affect them. Here are some references that should help pinpoint the problem. Pruning can also increase vigor.

Our holly berries were not eaten this year as they have been visited by a flock of birds each winter past. What will happen if berries are not eaten? Thanks
They will eventually drop off. Since they are poisonous, you may want to clip off the ones you can reach so unsuspecting pets or kids don't pick them up.
We planted Royal Family Holly bushes last summer and now see a growth on them which we feel is a problem. Can you identify what this is and the solution?
Hollies are normally evergreen, so I believe those are leaf buds getting ready to bloom. Your plant may have been drought stressed and dropped leaves. Be sure to give it adequate irrigation.

The leaves have fallen off. I thought the Bush was dead but when I bend the branches, they are green inside. Should I cut it down to where the branch is still alive?
Your holly may be perfectly fine! Read this article and you may be relieved:
