The plant is getting very tall and can't hold its self up, so I was wondering if I can top it, like you would a pepper plant, to encourage it to bush out.
Yes, these tolerate pruning quite well. This is the only way to keep the wild growth in check.
Here are a couple of articles that will help:

There is a gojiberry plant on an abandoned allotment next to ours. It runs everywhere, above and below ground. The new shoots arc gracefully, and then root themselves all over the place. Roots run, and then pop up. Once the new shoots have hardened off they are very thorny. If the site manager agrees I would like to get rid of it. How??
Since it is probably hard to eradicate, I would suggest a "bush killer" instead of just glyphosate.
Be sure to follow all label directions exactly.
I noticed there are quite a few ants (100+) and they are making nests under the leaves and also a very small insect along side them. A couple leaves are chewed up but the plant looks healthy. Are ants bad for my plant? Thank you
No, but the aphids that they are farming on your plants are.

Our bushes are loaded but we need to know what to do with the harvest--how to make healthy juice or dried berries. Thanks for the help.

I don't know how to stop the Goji berry bush I planted. No one ever mentions the fact that they are invasive. How can I get rid of the roots & runners?? I am just sick that I will have these plants coming up all over my yard.
I agree! This should be a warning to many gardeners in the northern United States! We will get some information out to the public. in the meantime, these articles can help you:

I asked the question about the Goji Berry running rampant. I want everyone to know that I always check for information about invasive plants. When I was checking out Goji berries (they are supposed to be very healthy for you) no one that sold them said they could be invasive. When I looked online every article told me how to take care of them but absolutely nothing about the fact that they can be invasive. I try very hard not to use herbicides but ... The plants are gone but I am still dealing with the roots/runners that were left. Please don't put Goji berries in the ground unless you don't care about them taking over.
