My gardenia bush has some blooms and green leaves on some branches. Some branches look like they are dead.
Cut off the dead branches and inspect for insects or spots on leaves. Then follow these growing tips:

I got my tree a few weeks ago for Mother’s Day, and now the leaves are falling off! Tried to put it in a spot with some sun but not full sun. And have been watering it a few times a week.
Gardenias are tricky to care for and you have to follow their specific growing conditions. You may be watering too much. They like moist soil but not saturated. Make sure the pot is not sitting in water. Here is more:

thy there are lots of buds but no flowers like they used to have. I live in Newcastle NSW. Also what time of year do I prune roses? June or July? Also when to plant new roses. Is it best to plane bare rout or normal planting method which I have always used before.
Roses are best planted in spring or as soon as the soil can be worked. Here is more info on roses and gardenias.

I am trying (again) to keep a gardenia bush alive. I have it on a patio in full sun and then moved it to part shade. The buds get brown and drop. It's in a large plastic pot but without any peat or mulch which I can add. Suggestions?
This article should help. I would add mulch to help keep it cool. If you need acidic soil, you can add peat to the container soil.

I have a potted Gardenia out on my patio. it only gets AM sun. Is it alright to add coffee grounds to soil? I use Mir-Acid every two weeks. It looks great with new growth. I live in Arizona and so far the intense heat has not bothered. We're in the hundreds. Will it survive this heat all Summer or should I bring it in the house?
On the coffee, if they are used grounds, they will not acidify the soil, but can help improve drainage. Your plant will let you know if the heat is too much. Keep it watered and fertilized. These articles should help:
