I am curious if I can grow a combo of English ivy and hops on the same trellis. I want the evergreen quality of ivy but the usefulness of hops. Will one overcrowd and kill the other if planted together?
English ivy can become aggressive over time, so if you do this you will need to keep the ivy trimmed back or it will take over. Hops grow from a perennial rhizome but the aboveground parts of the plant die back and re-grow each spring. Your plan should be possible but you may have to clear out some of the English ivy each year to make room for the hops.
Should I bring the english ivy plants for the winter months?
English Ivy is hardy down to zone 4. If you have this plants in pots, you can bring them to a sheltered location when they have gone dormant.
Your garage is a good place.
Add some mulch to the top of the pots to help with moisture retention. Check the soil about once a month to make sure the soil has not completely dried out.
Add a small amount of water if needed.
If you choose to bring them indoors to have as a potted plant, make sure you watch for signs of insects during the dry winter months.

If I cut some English Ivy to replant somewhere else, where do I cut it at and what do I do with it once I cut it? Do I plant the pieces I've cut into smaller pots and allow them to root before they are replanted? We want to have the English Ivy growing on the back of a 2-story house, wanting it to grow down.

I received an English ivy in a basket from my wife as an anniversary present on March 10. Now the leaves are starting to fall in clumps after being watered. Any suggestions?
It sounds as if your plant was overwatered and that it is suffering from Root Rot.
The soil should dry between waterings.

I purchased 3 containers of English Ivy to plant on a small fence area from a local dealer. When I prepared my soil for planting, I noticed on the plant tag that it was an "annual". Does that mean it will die after the growing season and not come back in the spring? I live in central North Carolina.
English Ivy is hardy in zones 5-11.

Is there a product I can spray or sprinkle over my established English Ivy garden that will kill grasses growing in between the vines? I have tried a few commercial products but am worried I will also kill the ivy. Any ideas?
This is never the answer that gardeners want, hand pulling the weeds is the only safe and effective method.
Once the grass is under control you can heavily mulch the area to keep the weeds and grass from returning.
