I have several hibiscus plants and in cooler weather can put them in a small greenhouse, but is it all right to prune them so they are not so large?

Yes, this is ok to do. You can cut them back by up to a 1/3. This article will provide more information: https://www.gardeningknowhow.com/ornamental/flowers/hibiscus/tips-for-pruning-hibiscus-plants-when-to-prune-hibiscus.htm
