Q.Harvesting oregano

Most of my oregno it’s gone to flowers/seed. I have dried it. . Can this be used as an herb for cooking? How will that affect the flavor?Any thing else to consider?

You can still use it, but often when something bolts like that, it will make the flavor, either over bearing or bitter.
