I have a new hibiscus tree and the leaves are turning yellow. Too much water? In need of fertilizer?

Leaves turning yellow are most likely a sign of too little water, although they can also signify too much water or too little light. The only way to know for sure is to dig up some soil around where the roots are, to actually feel it. Also, new plants don't need fertilized for at least 6 months, because the growers fertilize them heavily in the greenhouse.
