How do you prevent ants from attacking yellow corn once the stalk has bloomed?

Generally, when you see ants on plants, they are not attacking the plant but rather feeding off aphids (which are attacking the plants). Inspect for aphids. If you do not see aphids, you can try diatomaceous earth or uncooked grits around the base of the corn. They both will help to kill the ants.
