Which are the best vegetables to grow in my wicking beds in the winter time ?

Depending on how deep your beds' planting soil is, you'd do well to plant some leafy greens like spinach, kale, parsley or arugula. Cabbage is a great winter crop. If you have the soil depth, you could try beets, carrots and turnips or other root vegetables. Broccoli and Brussels sprouts should also do well.
