Q.When Should I Harvest My Potatoes?

I have never grown potatoes. Had some that were sprouting inside my house, so I planted them in our raised beds. They are growing like crazy! BUT, I have no idea how they’re supposed to look when they’re ready to be harvested. I’m in the PNW in a cooler climate, coastal range area, but lots of sun. I’ve included a photo.

This depends on your end goal- If you want, only, a few potatoes at a time, then only take what you need and carefully replant, after about 2 months.

If you want to harvest everything at once, then wait until it gets too cold or the plant dies off naturally. The longer you let it go, the more and bigger tubers it will produce.
