What Type Of Tree Should I Plant For Coverage That Grows Relatively Quickly?

I am replacing a conifer in my garden that went brown and died. I need a tree that has good coverage, is evergreen and grows relatively quickly and does not spread everywhere. I have a dog and so most fruit trees are out for fear of them being toxic. I already have a Californian lilac and a butterfly tree.
