I have watercress potted, kept watered, partial shade. Am I supposed to “deadhead” them or cut off blooms as they appear?

Yes, once they bloom, the flavor is diminished. You can prune the leaves to encourage fullness. Start harvesting three weeks after they emerge. Here is more:
