Why are the petals falling off my sunflower one by one? Should I be deadheading these?

Mature sunflowers will naturally drop their petals, at which time seed harvesting can be done. If the flowers are young and dropping, then it may be an issue with sunflower petal wilt. You do not need to deadhead these flowers.
