My zucchini and squash seedlings bottom leaves are turning yellow. They are in a greenhouse waiting to be put out in the garden.
If by the bottom leaves, you mean the cotyledon leaves - which are the first leaves the plant gets after sprouting, this is normal. Plants drop their cotyledon leaves after they have a few true leaves.
If the plant is dropping/yellowing its bottom true leaves (also referred to as their second leaves), then this indicates either a lack of water or a lack of nutrients. It will correct itself with some additional water or with some diluted fertilizer.
Why do the stems on my zucchini plants turn white and split?
It sounds like you may have a vine borer. These articles will help:

Is there a spray/chemical to prevent/stop zuchinni mildew?
I personally like neem oil or you can use copper sulfate. This article will help:

This morning my zucchini plants have black bugs and black slime on their leaves. What could be causing this and how to get rid of?
You may have a slime mold or sooty mold, which is feeding off the honeydew produced by the bugs. The bugs are likely aphids. This article will help with them:
https://www.gardeningknowhow.com/plant-problems/pests/homemade-aphid-control-a-natural-way-to-kill-aphids.htm
Once the aphids are controlled, the slime should go away on its own, but you can get rid of it faster by treating the plant with a fungicide.
Why do my zucchinis grow about 2 inches then they die off/shrivel up?
It is a pollination issue. These articles will help:

Zucchini leaves are fully spotted in brown and are covered with small holes. Leaves seem to be eaten away. Never saw this before and have been growing them for years. I used my own seeds this year. . . have they been contaminated?
If it's insect damage, the culprits could be either slugs (which feast at night) or vine borers (which hang out near the base of plants). These articles will help: https://www.gardeningknowhow.com/plant-problems/pests/facts-about-slugs-and-how-to-kill-garden-slugs.htm

If it's due to a fungus, neem oil may help. It's also good for many insect pests as well. Here is more information: https://www.gardeningknowhow.com/plant-problems/pests/pesticides/neem-oil-uses.htm
The plants were grown from seed, and have looked really healthy until this weekend. Now the most mature leaves have a lacy look, with lots of holes. I do not see any little insects. There is a bit of white or brown around the holes both on the upper and undersides of the leaves -- I am actually Zone 2, not Zone 5.
It cold be caused by flea beetles. This article will help if it is that:

But the lacy damage you describe is normally more attributed to Japanese Beetles. This article will help with them:
