I redid all my soil and put in good soil, added food to it, and the water comes on three times a day--still my strawberries are tart. Can you tell me why?

I have a raised bed that has strawberries coming back from last year. I was weeding them and removing the straw I placed over it for the winter, and ants are everywhere. I may have disturbed a mound and not realized it when I was raking it, but I can't find where they are coming from! How can I safely kill them without hurting my plants? Chemicals are not an option.

I am not having good luck raising either sweet strawberries, cantaloupes or watermelons. In Mississippi clay soil, we grew wonderful melons, but although the melons get ripe, they just don't seem to get really sweet. Any suggestions?
The soil here is more sandy than in MS, but not particularly more organic. We keep plowing the organic material back in . . . and we do fertilize.

Do strawberries need a cage to climb?
I was wondering if strawberries turn red before getting bigger.
I had a strawberry patch in the yard that became overrun with weeds. I took out the plants to start over with a raised bed. I'm going to be bringing in more dirt/sand. Should I put plastic or landscaping cloth down first to kill the weeds and grass, then put my dirt on top? Or will the plastic keep the soil from draining? Thanks!
I would use landscaping cloth or layer of newspaper. This will suppress the weeds without interfering with the drainage.
