Hi, I am growing ginger in containers, and they are growing nicely. My question is, when it’s time to harvest the Ginger should I let it dry first before processing such as freezing, making it into powder etc.? If so, please send me instructions on drying and processing. As always, thank you!

Not sure if I should cut down the stems which have flowered last year . Can I use the cuttings to regrow?
Yes, you will only prune them after flowering. You will have better luck taking root segments with growth nodes, but stems that have not flowered yet will develop roots. This collection of articles will help you to take cuttings:
