It seems to happen during damper weather. It appears to be a flying insect. (Not snails.)
Here's an article that may be helpful, but this looks very much like you've had snails or slugs munching on your fruit in the night. Try to check with a flashlight at night. They normally don't feast during the day. Otherwise, you may want to examine the plants closely to see if you have an infestation of some kind of insect. Those segmented things on each photo looks similar to the eggs of leaf footed bugs they are sucking insects not chewing insects. My plant shows no signs of fungus otherwise. The fruit starts out green then turns yellow then rots.

I bought a dragon fruit plant from a local store. This is my first time growing dragon fruit. I took the plant and planted it. It has two main STEMM. I believe both of you from the same plant. One Stemm has grown 6 to 8 inches in the last month and a half while the other hasn’t grown an inch. Should I prune this plant and planted in the ground on the other side of my post?
You can leave it, or you can prune it off! Whatever you cut off and plant will grow into another plant. They root, very, easily.
