Q.Any Idea How To Fight This Unknown Pest Eating My Dragon Fruit? I’m In Southern California.

It seems to happen during damper weather. It appears to be a flying insect. (Not snails.)

Here's an article that may be helpful, but this looks very much like you've had snails or slugs munching on your fruit in the night. Try to check with a flashlight at night. They normally don't feast during the day. Otherwise, you may want to examine the plants closely to see if you have an infestation of some kind of insect. Those segmented things on each photo looks similar to the eggs of leaf footed bugs they are sucking insects not chewing insects.
