After the first harvest of broccoli, will the plant grow another head or is dead?
After you have harvested the main head, you can continue to harvest the side shoots from the broccoli. These will grow like tiny heads to the side of where the main head was. By looking at the size of the florets, you can tell when these side shoots are ready for harvest. Simply cut them off as they become ready.

It may be that it just needs more time to form heads. They also need even soil temperatures to form good heads, so mulching around them may also help. If the soil is lacking in phosphorous, this can also cause problems with head formation.
It sounds like they have transplant shock. Go ahead and increase water and put a pinch of sugar at the base of each plant. This should help them recover.

Am I supposed to remove completely the broccoli plants that bolted and bloom without any fruits?
