Must move several new plants (8+feet high), clearing out from overgrown area (seating & fire pit). Most robust spread & growth (diameter & height) in over 10 years. Still have new shoots daily. . . (unusual) Help. . don't want to lose any, but must move asap. Tips on soil prep, fertilizer, hormones, etc.

Just bought a house with two large areas of Bamboo. They look untidy at present, and I want to keep them. Should we be pruning, cutting back, leaving alone?
Normally with bamboo, you do not prune, you dig. Bamboo spreads quickly and to maintain a contained space, anything that is outside the space is dug up. You can prune bamboo quite freely to reshape it or to rejuvenate it. It really is a plant that can take almost any abuse. Just trim away any parts that are looking a bit ragged. It will grow back more lush and full.
I have several Bamboo plants in my kitchen window in vases and a glass or two. They do not get a lot of sun since it's been raining so long where I live. Had them a while now and they are turning yellow. Every bit of the plant. With very little green still on the plant. They're all doing the same so must be same reason. Maybe not enough sun? And I keep them in full fresh water, though I don't put new fresh water in the containers, just add water when getting a little low. And my house is usually only kept around 60-62 degrees. Could they not be warm enough?
It is likely the light. You can give them more light by placing a fluorescent bulb near them. Just to be on the safe side, change their water completely and add just a drop or two of water soluble fertilizer.
My neighbor has bamboo growing and told me he didn't mind if I took some to make a houseplant. I have no idea how to go about this project or where to start. I've read online about how to care for the plant once you have it, but can't find anything on how to actually make the plant.
Transplanting is hard work and involves digging a large chunk of root ball out of the ground. Never transplant bamboo when it is shooting. Dig bamboo either very early in the spring before there’s any chance of shooting or wait for the growth period to be over late in the autumn. You should look for a clump of culms that has come up in the last year or so and which includes at least three or four healthy-looking culms. When should I top new shoots to get them to bush out rather than growing tall?
It may be pruned to a more manageable and attractive size by making a clean cut just above the leaf bract. Smaller stalks will branch out just below the cut, resulting in a fuller, bushier plant. This can be done any time.
