Q.rhubarb transplanting

I relocated long term rhubarb plants three weeks ago after the leaves started to appear. I did not divide the roots but rather transplanted the entire roots. Could I cut stems to use this year or should I let the plants rest and not harvest any until next year? They look great. Thanks.

I would harvest up to 1/2 of the plants.
