I have 2 raised gardens filled with compost, leaves, grass clippings, and topsoil. I covered them for winter. Should I uncover them now (February)? Should I have covered them at all? One is new and the other used for great veggies last summer.

You do not have to uncover the garden beds prior to snow melting.
You can allow the snow to melt as the spring arrives. This will actually aide in putting moisture into the soil bed.

Once the beds warm and dry out you can began working the soil and you can then access what the beds will need for planting.
