Gardenia Plants

Q.Medicinal herbs

I would like to plant medicinal herbs in the beds along the front of my home. I have a few alias and 2 blueberries plants 1 gardenia in each side of beds (it stays diseased and I have had to keep it cut completely down….need to remove….I have tried everything and it is only a temporary fix)
The beds seem to get a.m. sun….and then throughout the day sun shine comes and goes…
Any advice would be appreciated…
I live in the midlands of Columbia SC….and have over an acre of land that I could use to garden or experiment as desired…However: wild animals think our space is the party space…. I have had to rethink my compost piles along with my worms…and even a small garden space that is in a fenced spot and then the actual plot is fenced…and creatures continue to get in and dig through the dirt for anything they can find…leaving holes….and destruction to my little garden…and leaving one upset and out of ideas gardener…
