We are not sure what variety of Yucca Perennial we had in our garden, but we dug them all out because they were so invasive.
Someone said that the root is edible. Is this true?

Almost all parts of the plant are edible. Some need to be boiled to be safe for consumption. but this plant has been used for a food source for some time.
