Q.How Much Water Do My Newly Planted (From a Pot) Peach and Plum Trees Need?

I just planted a peach and plum tree. I have looked around a lot and can’t find a clear answer on how much water they need now that they are planted and it is late October. Also, I saw some videos where they pruned them severely, like chopped them off at about the 4 foot level. Should I do this too? I live in Las Cruces, NM (almost to the southern border). Thanks much
