Growing and Harvesting Bok Choy

Question

I’m not sure what’s going on with my Bok Choy plants. They are spreading out, more flat than in the tall-celery shape you have described. Maybe I haven’t let them grow big enough yet? Will they gain their height as they mature, or do I just have strangely flat plants? This is the first time I’ve grown Bok Choy, so I don’t really know what to expect. Also, my plants seem to be a little ‘prickly, ‘ unlike what I have purchased at the store. What do you think? Help!
