I dug some potatoes yesterday and aired dried overnight. This morning knocked off the dirt left. Why are they hard as a rock?

I am not sure why this would happen. Some varieties of potatoes are apparently harder than others, so maybe it's just a variety difference. I am not sure whether environmental problems or nutrient deficiencies could cause this.
