It just creates a longer risk of the tree having exposed wounds.

Generally fruit tree pruning should be done in the spring after all chance of freezing is gone and BEFORE the plant starts to put out new vegetation. Yes it is a very slim window, usually about a week or two at best for the optimal time. But any time in spring can work.
