Q.Does Wild Ginger Die In Bags?

I’ve pulled out all our wild ginger and had it in tarp or bags for months but is still hard

I can't tell if you are trying to store them, or start them growing. Either way, this will not be a good method for either. I would advise storing them in sand, or in a dark, cool area with desiccants. These articles will help:
