Do You Need To Cover Or Treat The Area Of A Large Branch?

Our trees are older and I am hoping if I remove a large branch it would less likely to break in large storms. Also i was told to clip it into the shape if a mushroom , can you explain how? Thank you for any help 🍎🍏
